Glyceryl Monostearate, Flake is commonly referred to as GMS and is an organic molecule that is often used as an emulsifier. It has neither color or odor but has a sweet taste and is a flaky hygroscopic powder. It is naturally occurring in the body and is the by product of fat breakdowns. It is used as a food additive and emulsifier, as well as an anti-caking and thickening agent.
